Mini Marshmallow Wafers

A sweet and simple vintage treat, Mini Marshmallow Wafers are made by topping vanilla wafers with marshmallows and broiling them until golden and gooey. With just two ingredients and a few minutes under the broiler, they’re perfect for retro snack trays, scout activities, or a quick dessert fix.

Instructions:

  1. Preheat Broiler: Set oven to broil and position rack about 4–6 inches from the heat source.
  2. Assemble: Place 24 vanilla wafers on a foil-lined baking sheet.
  3. Top with Marshmallows:
    • Use 1 marshmallow per wafer, or
    • Use ½ of a regular-sized marshmallow per wafer (cut crosswise for a flatter melt). (Note: Whole regular marshmallows can be used, but may puff quite tall. Halving them helps with melting and stability.)
  4. Broil: Place under the broiler for 1 to 2 minutes, watching carefully, until marshmallows puff and the tops are golden brown.
    • Alternative, use a mini marshmallow and only broil for 30-60 seconds, watching carefully.
  5. Cool Slightly: Let cool for 1–2 minutes before serving warm. The bottoms will firm up slightly as they rest.
